ABOUT US

Objective

Through our extensive experience in wines, champagnes, beers, aperitifs and digestives, our aim is to share our knowledge and recommendations with consumers and help guide them in their choices.
In recent years, the wine trade has become something of a jungle with the arrival of so many foreign wines. As a result, making the right – and especially a good – choice has become more difficult for consumers, especially when the outside of the bottle has become better looking than the taste of the wine inside. What we want to do is guide consumers towards making the right choice in the world of wine and other beverages.

Experience

We would like to pass on something of our knowledge to everyone – whether they are beginners or more experienced wine-buyers. We can confidently state that that our knowledge is very far-reaching. And our experience as sommelier is your best guarantee of benefiting from our know-how.

  • Sommelier at renowned top restaurants in Belgium:
    • SLAGMOLEN in Opglabeek
    • SCHOLTESHOF ** in Stevoort
    • BRUNEAU ** te Brussels
  • Buyer and “guardian” for the famous wine cellar at Kasteel Withof
  • Trainer to young sommeliers
  • Work experience in France at the “Faculté d’oenologie” in Talence, Laurent Perrier, in Alsace,
    Bordeaux etc.

  • Finalist, Best Sommelier IN BELGIUM 2004 PROSPER MONTAGNE
  • General chemist in Drogenbos (wine is more than just grapes and a barrel)
  • Graduate of the 2-year Sommelier course in Brussels, with distinction
  • Many wine-tasting courses with top sommeliers
  • ‘Maitre-sommelier en vins de France’ by SOPEXA

Opportunities

We will bring you, as a wandering consumer, into contact with beautiful and fine wines with the aim of acquainting you with the pleasures of European wines, as well as with “new world wines” from outside Europe.
We will teach you how to recognise a good wine and how best to combine it with food. Our aim is to allow consumers to “sniff” their way round the wonderful and adventurous world of grape varieties. No-one knows all of the wines in the world, not even us, but we can be your guide, because we do know a lot about it.

Other knowledge

We have a great deal information about Tunisian products. As a result of our knowledge about Tunisia itself, but also because of the language, we are able to offer you the very best. As a result, we know the right “way” to go and have the right connections in this big, exotic country, whose locally grown, authentic, pure and flavoursome ingredients we will acquaint you with. With no “middleman”, we can put you in contact with top-quality, exclusive products that come direct from this wonderful, fertile country.

CONSULTING

Hire a sommelier

We will be delighted to impart our insights to you through our enthusiasm and knowledge about wines from all over the world. We will explain to you what an honest wine is and which wines you can imbibe and enjoy with total peace of mind. And we can also advise you about lesser known wines that certainly deserve to be enjoyed. Even if you have an extensive library about wines, that doesn’t necessarily mean that you are a good wine-taster or connoisseur and can tell the wheat from the chaff, as it were, with any confidence. Wine-tasting and knowing about wines is a sensual thing that you cannot learn to experience properly by reading alone.

Private individuals

We will go searching for the rights wines for you that suit your budget and meet your requirements. An expensive wine is by no means a definition of a good wine – after all, there are so many people and so many tastes. We take careful account of what you want to achieve and will advise you about which wines combine best with which dishes. Working together, we will discover your “house wine”, because in the end, it is your calling card and tells people everything about your knowledge, originality, expertise and especially your hospitality. You can put together your own wine collection with a specialist sommelier or expand it to become a sommelier in your own home.

Trade & Hospitality industry

Our knowledge is represented so broadly that even the trade and hospitality industry call on us for our experience. It may be about introducing unknown wines in your restaurant or helping you to develop your wine cellar. And, of course, we can also assist you in producing your own wine list and give you ideas about your pricing. The trade can call on us to gain even greater knowledge and also to ask about ideas. We are able to advise the trade about new wines and about wines grown in vineyards with specific climates, as well as to provide advice about getting the price/quality ratio right.

Gadgets

No-one is born a wine collector and in most cases, it is something that grows gradually. Building up a wine cellar is fine in itself, but storing and serving wine also requires a certain knowledge. What is the best way to keep the bottle and at what temperature? How do we open the bottle correctly and should we allow the wine to breathe? What is the best equipment to use when decanting a wine? Which glass should be used, because the glass is literally the mouthpiece of the wine in terms of its flavour and aroma? A glass should also be beautiful to look at, as well as easy to drink from and sit comfortably in the mouth. Whatever the topic, we can advise you.

WINE-TASTING

General

We organise wine-tasting sessions on location or at your home. For you alone, or with friends, family and acquaintances, or as a group.
As a topic, we can opt for wines using a specific variety of grape, or from a local growing area or country, a well-known wine-grower, traditional wine-making or an individual style of wine.
When we do tastings of olive oil, we also provide you with every opportunity for using it in dishes or other ways of using it. Apart from anything else, olive oil is very good for your health. Tasting sessions of our other unique, locally grown and exclusive products depends on the season and supply.

Wines

If you want to serve three fine wines every week, you will have to purchase a great many wines of various origins on an annual basis. You will also have to get the price right so that they taste right and meet the definition of “fine” in your eyes. To achieve that aim, you will first have to taste them. Thus far, no-one has been able to extract flavours, aromas and colours from a book. So we will work together in sampling the wines you want. Alone, with a couple of friends or in a small group. In a one-off session, for example to make your party extra-special – which is something that will very much be appreciated by your friends – or in a series of sessions.

Champagnes

Tasting various champagnes is something that needs to be done at one or more champagne houses. This will initiate you into the world of quality sparkling wines. When can a wine be called a champagne? What grape varieties have to be used to make champagne? How long does a champagne mature in the cellar and is it made from white grapes only? We will teach you to identify a fine champagne, because as great-looking as the bottle may be, the champagne itself has to be good as well.

Luxury products

We are going to let you taste the difference in flavour between an olive oil you buy at your local store or supermarket and a genuine olive oil. You will also find out about its effect on your health and the healing powers of honest, traditionally-made olive oil. Because with olive oil, the growing area and soil type are very important.
Tasting sessions with craftsman-grown preserved fruits, harissa and tomatoes from Tunisia will simply amaze you and can also be combined with olive oil tastings.

WINE SALES

Wines

You can order exclusive and unique top wines from us, of course, but we also have a wide range of elegant quality wines to offer, too. Allow yourself to be surprised by the choices made by Le Palais des Saveurs. With our unbridled inspiration and enthusiasm we are able to offer you wines of the greatest character. Le Palais des Saveurs can also get hold of exceptional wines for your collection because we receive information about once-only offers in the wine world and know the best way to approach wine auctions. Another method is to search out viticultural crown jewels that bond with you as one, forming a single unit and fitting into your collection.

Kosher wines

Our Kosher range includes top wines produced in accordance with strict rabbinical methods, using ingredients that comply with Jewish dietary laws. The entire wine production process takes place under rabbinical supervision and is monitored by Jews who obey the Sabbath. The facilities and machines are used exclusively for producing Kosher wines. The grapes are handled only by Jewish workers who live according to Jewish customs, from harvesting to bottling. These factors, and these alone, make a wine Kosher. Le Palais des Saveurs has some astonishing Kosher wines that, as becomes great wines, are fascinating for their aroma and flavour.

Champagne

Champagne is made using grape varieties from vineyards in the “Champagne” region in France. Sparkling wines outside this area are not allowed to be called champagne, even though the same method of production is used to make them.
We have the pleasure of being able to offer you the best champagnes from the best champagne houses. Our fine champagnes are outstanding in quality. We can also offer you all bottle sizes.

Aperitifs & Digestives

Our aperitifs, i.e. drinks designed to whet your appetite, the tradition of which probably stems from promoting the digestive process, and digestives, which also help with digestion after a meal, come to us from all over the world. We try as much as possible to find good supplies of very special products that are locally grown and produced. You will also find our passion for rum in our range. We can give you advice about how to make the best – and most delicious – cocktails that will delight your guests.

TUNISIAN PRODUCTS

Olive oil

People have known about the healing powers of olive oil since time immemorial. Since then, we have come to know that heart and vascular diseases occur less often in people who use extra virgin olive oil. Also, because of its vitamin E, antioxidants and other natural nutrients, olive oil is not only delicious in hot and cold dishes, but is also a product that is good for our health. Olive oil is the best of all fats and is one of the most natural and healthiest foods. It has an irresistible flavour and quickly takes on the aromas and flavours of herbs and spices, making it a unique base for sauces.

Socohuile olive oil

The main characteristic of Socohuile olive oil is its refined and unique flavour. This exceptional taste and aroma stems from the way the olives are grown and from the soil types around Sfax, which are among the best in Tunisia, as well as the methods used for picking, pressing and preparing the fruit. For some time now, there has been major activity in the area of organic Socohuile (extra virgin), which is an oil full of character and brings the best out of vegetables. Olive oil is obtained by pressing olives and as with wine, it is the growing areas, tree roots and procedures used that give the oil its distinctive flavour. It is not without some pride that we can tell you that we are the Belgian distributor for the Socohuile company in Sfax, which is one of the world’s top producers. We distribute Socohuile to the retail trade hospitality industry and private individuals.

Sfax is a Tunisian port on the Gulf of Gabes, with an imposing medina hidden behind 9th century walls in which the higgledy-piggledy streets still exude an authentic atmosphere that has not been harmed either by the passage of time or the advent of the tourist. The area around Sfax is an enormous grove of evergreen olive trees. With its 500,000 olive trees, including many that are centuries old, the region is home to the famous Barouna olive.  The area is also characterised by its impressive numbers of palm trees, which number 300,000 or more, and when combined with the olive trees creates a wonderful oasis by the sea.  The olive tree, “Olea Europeaea” in Latin, originated in about 3500 BC, and at the time already played a major role on account of its high nutritional value and length of time that its fruit could be stored.

Harissa

Our connections with Tunisia also mean that we are able to import the tastiest traditionally made Harissa for you. Harissa is a Tunisian red sauce rode made from red peppers, tomatoes, cumin, coriander and garlic. It is used in most of the countries of North Africa to make dishes of soups, pasta, rice, etc. Harissa is also mixed with olive oil to make a very special and tasty dipping sauce. We can provide you with a wealth of tips for using harissa at our tasting sessions.

Exclusive products

Tasty products from Tunisia are a whole world waiting to be discovered. Out of sight is out of mind! With its geographic location and long dry summers with temperatures of between 25 and 45ºC, Tunisia has long been known and appreciated as a supplier of exquisite produce.
Tunisia gives us many delicacies for our culinary pleasure, both for people at home and for the retail trade and hospitality industry, depending on supplies and the season. We are always able to provide you with traditionally produced tomato products that are bursting with flavour. All year round we have authentic fruits produced the old way by craftsmen for your enjoyment: peaches, apricots, passionfruit, dates, figs and so on.
